Apple Macadamia Nut Stuffing...

I've searched for years trying to find a good Thanksgiving Stuffing. "Voila"... here it is. You don't want to stuff your turkey with this one. Just bake it and serve it as a side dish.

11/2 Cup Butter
2 Cups Apples peeled and diced
1 Cup Onion chopped
1 Cup Celery chopped
7 Cups Toasted Bread Cubes
1 Cup Macadamia Nuts chopped
1 Tsp. Salt
1/2 Tsp. Nutmeg
1/4 Tsp. Pepper
2 Tsp. Poultry Seasoning
1/2 Cup Chicken Stock

Melt butter in stock pan- add apples, onion and celery and cook until soft. Add seasonings, followed by bread cubes and nuts. Moisten with the chicken stock and place in a buttered glass baking dish. Bake at 350 for 30 minutes.

Bacon Bites...

Okay now this is a great appetizer... they are gone before anything else.
1 lb. Bacon cut in thirds
3 Cans of Whole Water Chestnuts

Sauce
1 Cup Catsup
1/2 Cup Brown Sugar

Wrap each chestnut with a slice of bacon and secure with a toothpick. Place on a baking sheet and bake at 375 for 15 minutes... Drizzle with the sauce and return to the oven for 10 more minutes. Try to arrange on a platter to serve your guests... Good Luck with that one!

Yummy Pecan Yams...

I stumbled across this recipe a few years ago when looking for a yam recipe everyone would like. It has since been the favorite... like eating dessert!

4 Cups Yams cooked and mashed
1/2 Cup Brown Sugar
1/2 Cup Butter melted
2 Eggs
1 Tsp. Vanilla

Mix all ingredients together and fold into a glass casserole dish.

Topping
1 Cup Brown Sugar
1/3 Cup Flour
1/3 Cup Butter melted
1 Cup Pecans chopped

Mix all ingredients together and sprinkle evenly on the Yams. Bake 350 for 30 minutes.

Dill Dip...

This is the BEST dip for Relish Trays or Crackers. You can make it a day or two ahead of time... which makes it even better. Everyone loves it.
1 Cup Sour Cream
1 Cup Mayonnaise
1/2 Tbl. Dry Parsley
1/2 Tsp. Onion Powder
1/2 Tsp. Dill Weed
1/2 Tsp. Season All

Combine all ingredients, cover and refrigerate overnight.

Broccoli Cheese Bake...

This is Kenny's favorite... but if I even thing about replacing it Sharee gets crazy.
4-6 Cups of Broccoli Florets Lightly Steamed
1 Can of Cream of Mushroom Soup
1 Cup Mayonnaise
2 Eggs
2 Cups of Shredded Cheddar Cheese

Mix all ingredients except the broccoli in a 9x13 glass casserole dish.
Gentle fold in the broccoli. Cover with foil and bake at 350 for 30 minutes.

Sandi's Strawberry Topping

I came up with this sorta accdidently...
It became a family favorite...

8 cups of Fresh Strawberries
1-2 Cups of Sugar
2 Tbl. Lemon Juice
Strawberry Jello

Hull and cut strawberries in half. Blend enough strawberries in a blender to make 6 cups of Puree. The last two cups should be blended until chunky. Put all ingredients in a large pan and bring to boil. You can add 1-3 Tbls. of the Strawberry Jello to strengthen strawberry flavor if needed. It's important to add sugar and jello as needed.

I have served this at many Church Youth Activities and Camps. It's great on pancakes or French Toast. Try it...You'll LOVE it!

German Pancakes

This is the best recipe... especially for in a hurry mornings. You can put this in the oven and shower while it baking. Try it with syrup or powdered sugar.

1/2 Cube of Butter
3 Eggs
3/4 Cup Milk
3/4 Cup Flour
You can add a sprinkle of Nutmeg or Cinnamon if desired.

Set your oven to 425`. Melt 1/2 cube of butter in a 9x13 glass baking dish. Blend Eggs, Milk and Flour in a blender. Pour in hot baking dish... Bake for 15 minutes in the middle of the oven. We having baked two or three at a time and switched racks after 10 minutes.

My teenage boys could literally eat a whole one. They love it best with homemade Strawberry Topping and Dessert Topping. Enjoy!

Sweet Potato Pancakes...

This is a wonderful find from Sharee... Super yummy pancakes and very nutritious.

4 Cups Milk
2 Cups White Flour
2 Cups Whole Wheat Flour
4 Eggs
1/4 Cup Sugar
1/2 Cup Canola Oil
4 Tsp. Baking Powder
2 Tsp. Baking Soda
2 Tsp. Salt
2 Tbl. Wheat Germ
1 Tsp. Cinnamon
2 Cups Sweet Potato Puree

To make Sweet Potato Puree you just bake a few Sweet Potatoes... Scoop out the Sweet Potato and puree. Freeze in 2 Cup servings.

Simply combine all the ingredients... add more milk for thinner pancakes. Serve with warm Homemade Syrup and a sprinkle of Cinnamon. So healthy for your children.

Mom's Granola

A healthy choice for anyone... granola with fruit and yogurt is light and refreshing. Cute little Eli loved gramma's granola...it was one of the few things he would eat.

3 Cups Oatmeal
1/3 Cup Wheat Germ
1/3 Cup Coconut
1/3 Cup Brown Sugar
1/2 Tsp. Cinnamon
Combine the above ingredients...

1/2 Cup Chopped Pecans
1/2 Cup Chopped Almonds
Set Nuts aside...

1/3 Cup Canola Oil
1/3 Cup Honey
1 Tbl. Vanilla
Microwave these for 1 minute... Add to the dry ingredients and mix well. Microwave for 2 minutes on 1/2 power. Add nuts and mix well... microwave 2 more minutes on 1/2 power. Spread on a large baking sheet to cool. Store in air tight container.

This recipe blows out of the house...

Sandi's Maple Syrup...

This is so easy... you may never buy commercial syrup again.

2 Cup Water
4 Cups Sugar
Mapleine to taste... about 2 Tbl.

Bring water to boil... add sugar and boil for 4 minutes. (the longer you boil the thicker the syrup) Remove from heat and add Mapleine to taste. Refrigerate to thicken.

I warm the syrup for pancakes and waffles. My family loves homemade syrup!

Egg McMartin's...

These Egg McMartin's are a favorite, hardy breakfast for those cold winter mornings. They beat any visit through the Golden Arches!

English Muffins
Eggs
Breakfast Sausage
Mild Cheddar Cheese
Sandi's Homemade Syrup (make the night before so it can thicken)

Make sausage into patties about three inches round and fairly thin... cook until done. Cook your eggs with the yolk broken in butter. Toast the English Muffins.
While hot... place sausage on toasted muffin... cover with egg and then a slice of cheddar cheese... top with the other half of the muffin.

Important Part! Dip in slightly warmed...Sandi's Homemade Syrup.

Sandi's Homemade Syrup...

2 Cup Water
4 Cups Sugar
Mapleine to taste... about 2 Tbl.

Bring water to boil and add sugar. Boil for 4 minutes... remove from heat and add Mapleine. Pour carefully into a container... cover and refrigerate.

Cheesy Scrambled Eggs...

Most scrambled eggs are dry and need to be smoothered with catsup to get down. Not these... try this yummy recipe... your children will gooble them up!

6 Eggs
1/4 Cup Small Curd Cottage Cheese
1/2 Cup Shredded Mild Cheddar Cheese
1/2 Cup Milk

Whip it all together... Melt 2-3 Tbl. Butter in a skillet and pour eggs into hot butter. Stir occasionally until done... My children love these scrambled eggs!

Breakfast Pizza...

This one our family favorites... and a Christmas morning tradition. The BIG kids love it and so do the LITTLE kids.

1 Can Pillsbury Crescent Rolls
8 Eggs Beaten
2 Cups Simply Shredded Hashbrowns
1 Pkg Link Sausage cut into bite size pieces and browned.
2 Cups Shredded Mild Cheddar Cheese

Spread Crescent Rolls on the bottom and up the sides of a large baking sheet. Evenly sprinkle the hashbrowns. Pour the eggs over the hashbrowns and tilt the pan to even out the eggs. Sprinkle the Cheese evenly and add the Sausage. Salt and Pepper if desired.

Bake at 375 for 20-30 minutes. Eggs should be done and cheese and crust slightly golden brown

Apple Butter...

You just have to try this... Apple Butter makes the best pancake topping! It makes your home smell like you have labored all day baking. Brady and Emma eat it like applesauce. YUM!

Fill your Crockpot with peeled/cored/halved Jonathan Apples.
Add:
1 Cup Water
4 Cups Dark Brown Sugar
4 Tsp Cinnamon
1 Tsp Nutmeg
1 Tsp Cloves
Juice and Rind of 1 Lemon

Put the lid on and let it cook all day or all night (6-8 hours) on low. Scoop the apples into a blender and puree. If you want it thinner... just add some of the liquid to the blending process. Enjoy!
Makes about 2 quarts. Store in refrigerator.
