This is easily one of my favorite Chicken Recipes... it rivals any restaurant creamy chicken dish. Seriously a keeper...
4 Chicken Breasts
1/2 Cup of Milk
1 Cup of Italian Seasoned Bread Crumbs
1/4-1/2 Cup of Butter
1 Cup of Chicken Broth
2 Cups of Heavy Cream
1/2 Cup of Fresh Chopped Basil
1 Large Roma Tomato diced into small pieces
1 Cup of Fresh grated Parmesan Cheese
Wash and dry chicken breasts... sliced through the middle lengthwise-making 8 thin pieces. Dip chicken in milk and then coat in bread crumbs. Melt 1/4 cup of butter in skillet... place breaded chicken pieces in hot butter. Cook over medium heat... watch carefully as not to burn the butter. You can add small pieces of butter to the skillet as you cook chicken so it doesn't burn. Cook on both sides about 5 minutes... or until done.
Remove chicken from skillet... add broth and cream blend until smooth... then add basil, tomatoes and cheese. At this point you can arrange in glass baking dish and spoon enough sauce over chicken to keep it moist. Cover with foil and keep in warm oven until ready to serve.
I serve this with a yummy rice dish... you could also serve it with pasta or mashed potatoes. Honestly... this is my new favorite recipe. Enjoy...!

Christmas Crack...
This is a super yummy Christmas Treat... I say "Christmas" because then I may only make it once a year. So addictive...
1 14 oz Box of Golden Graham Cereal
1 14 oz Box of Rice Chex Cereal
7 oz Sweetened Coconut Flakes
4 oz Bag of Slivered Almonds
(You can mix and match any of your favorite cereals, crackers, nuts... just use about the same amount of dry ingredients and you will be fine.)
Put all these ingredients equally on two large baking sheets. Blend well...
3 Cubes of Butter (yep 3 of them)
2 Cups of Sugar
2 Cups of Corn Syrup
Heat these three ingredients and bring to soft ball stage... about 3-5 minutes. Test by dropping a little of the mixture in a glass of ice cold water... if it forms a soft ball with your fingers it's ready.
Evenly pour this over your cereal mixture... gently mix with a rubber spatula.
Now try to only eat one bite... I dare you.

Cinnamon Roll Waffles...
I found this idea on the internet... tried it out on Emma... she loved them. It's super easy, fast and leftovers can be frozen... just pop in the toaster.
1 Can of Cinnamon Breakfast Rolls
Syrup
Separate the rolls into individual rolls and flatten. Place on hot waffle iron and push the lid down. They take about 2-3 minutes... Drizzle syrup or warmed frosting.
I also make this little waffles out of Orange Rolls and Biscuits... they are great for the grandchildren. Enjoy...!
