Applesauce Cookies...Frosted

One of my absolute favorite fall cookie recipe....I switch between applesauce and pear sauce to make the most delicious yummy cookies. Honestly.....just melt in your mouth crazy delicious.

Applesauce Cookies

1 Cup Butter
2 1/2 Cups Brown Sugar
4 Eggs
1 1/2 Cups Applesauce
5 1/2 Cups Flour
2 Tsp Baking Soda
1 1/2 Tsp Salt
1 1/2 Tsp Cloves
1 Tsp Nutmeg (when I use pear butter)
1 Cup Chopped Walnuts
2 Cups Raisins (optional)

Add ingredients in order given until each is incorporated nicely. Drop spoonfuls on baking sheets. (I like to use parchment paper) Bake 10 minutes at 350*

Frosting

1/4 Softened Butter
1 8 oz Softened Cream Cheese
2 1/2 Cups Powdered Sugar
1 TBL Milk
2 Tsp Almond Extract

Cream all ingredients together....frost cookies...and try to eat just one.

Dave's Favorite Potato Salad...

It must be a Martin Man Thing.....they love this potato salad....and can finish it off so there are no leftovers.
Potato Salad
6-8 Large Potatoes (boiled and cubed)
8 Hard Boiled Eggs (sliced up)
1 Large Can Sliced Olives
6 Dill Pickles (cut into bite size pieces)
1 Cup Mayonnaise
1/2 Cup Mustard
Salt and Pepper to taste

Combine all ingredients and fold together until well coated with mayonnaise and mustard. I often have to add more mayo and mustard depending on the size of potatoes I use. The boys think I have a secret ingredient...I guess it's the love I have for my Martin Men.
