Chicken and Wild Rice Soup...

Perfect for the chilly evening...this soup warms the hungry tummies and is perfect for a hearty meal.

Ingredients
1 Cup Wild Rice Blend
1 lb. Cooked Chicken Meat cut into bite size pieces
1 Cup Onions chopped
1 Cup Celery, Coarsely Chopped
1 Cup Carrots, Coarsely Chopped
1 Tbl. Minced Garlic
2 Bay Leaves
6 Cups Chicken Broth
2 Cups Water
2 Tbl. Poultry Seasoning

Combine all the above ingredients into a Crock Pot...cook on high 4 hours or low for 6-8 hours. When the rice is cooked tender you are ready to make the thickening sauce and finish the soup.

Thickening...
6 Tbl. Butter
1/2 cup all purpose flour
2 cups Half & Half

Melt the butter in a sauce pan...whisk the flour in a little at a time keeping the sauce smooth. Slowly add the Half & Half until thick and smooth. Add slowly to the soup stirring until well blended and smooth. I always needs to add another cup of milk to the final soup to make the perfect consistency. Add salt and pepper to taste. We like this soup thick for homemade bread bowls or dipping bread sticks. Enjoy...!

Apple German Pancakes...

Because sometimes you just need something super yummy.

1/2 Cup Butter Melted in a 9x13 glass baking dish.
5 Small Apples (cored, peeled and sliced) Scatter apples slices on melted butter.
Ground Cinnamon Sprinkled generously over apples.
1 Cup Brown Sugar Evenly distributed on top of melted butter.

Mix together...
3/4 Cup Milk
3/4 Cup Flour
3 Eggs

Pour over apples and bake 425* for 20 minutes.

This yummy concoction needs no added toppings...but it's always fun to try powdered sugar, maple syrup or Cool Whip.
