Company Potatoes...

Get ready for what will likely be your families favorite potato dish. It can be made ahead of time and refrigerated. The children will just gobble it up!
6-8 Potatoes
1 1/2 Cups Sour Cream
1 Can Cream of Mushroom Soup
1 Cube Butter melted
1-2 Cups Mild Cheddar Cheese shredded

Topping...
2 Cups Corn Flakes slightly crumbled
2 Tbl Butter melted

Boil potatoes whole with skins on until fork easily pierces to the middle. Cool... peel and shred potatoes in a glass baking dish. Fold the remaining ingredients in until well mixed. Be careful not to over mix. Add butter to Corn Flakes and spread on top of potatoes. Cover with foil and bake for 30 minutes at 350*.

These potatoes are a wonderful dish when serving a crowd. They are great as left over... if there are any left over. Enjoy!

Pork Chops...

These pork chops are so good... my family loves them.

4-6 Thin cut Pork Chops
1 Pkg Ritz Crackers crumbled
6 Eggs well beaten
1 Cube of Butter

Heat 1 cube of butter in a non-stick skillet. Dip pork chops in eggs and dredge in cracker crumbs. Fry in butter until golden brown on both sides. Place pork chops in a glass baking dish and cover with foil. Bake 350* for 45 minutes.

If you need to double this recipe.... make sure you change the butter half way through. There is no need to double the eggs, as 6 will make more than a single recipe.

I serve these Pork Chops with Company Potatoes or Baked Potatoes. Enjoy!
