Cranberry Chicken...

This is certainly a favorite... Good for formal dinner as well as a quick meal.

6 Chicken Breasts Rinsed, trimmed and dried
1 Can Whole Cranberries
1 Bottle Catalina Salad Dressing (small)

Arrange Chicken Breasts on a deep baking sheet...Combine Dressing and Cranberries... Spoon over Chicken Breasts... Bake for 1 hour at 350*.

Do not use frozen chicken or this will be really soupy.

I serve this with baked potatoes or company potatoes. Making it tonight!

Oreo Cheesecake...

Talk about Cheesecake meets Oreos... Just toooo good!

1 Cup Oreo Cookie crumbs
1 Tbl. Butter melted
3 8oz pkgs Cream Cheese
1 Cup Sugar
2 Tbl. Flour
1 Tsp. Vanilla
3 Eggs
1 Cup Oreos coarsely broken up

Preheat oven 325*
Mix Oreo crumbs and melted butter together and press in the bottom of a springform pan. Bake 10 minutes.
Beat cream cheese, sugar, flour and vanilla together. Add one egg at a time. Fold in broken Oreos... Pour over crust and bake 65 minutes. Loosen the rim from the side of the cheesecake. Cool completely before removing the rim. Chill... Garnish: I like to drizzle chocolate sauce on the dessert plate under the cheesecake with Dessert Topping and 1/2 an Oreo on the top.

Your family will love this... and request it often!

Sweet and Sour Meatballs...

These meatballs are moist and yummy... I serve them with rice or baked potatoes.

2 lbs Lean Ground Beef
1 Cup Rolled Oats
2 Eggs beaten
1 Onion chopped
1/2 Cup Milk
2 Tsp. Worcestershire Sauce
1 Tsp. Salt
1/2 Tsp. Pepper

Sweet and Sour Sauce
1/2 Cup Brown Sugar
1/4 Cup Apple Cider Vinegar
1 Tsp. Prepared Mustard
1/2 Cup Catsup
1 Tsp. Worcestershire Sauce

Combine all ingredients and form into 2 inch balls. Place in a glass baking dish, cover and bake 30 minutes at 350*. Uncover and drizzle Sweet and Sour Sauce... return to oven for 10 minutes.

The whole family will love these! They make great meatball sandwiches too!

The Sloppiest of Joes...

This is by far the best Sloppy Joe recipe... It makes alot and can be frozen.

3 lbs. Lean Ground Beef
1 Cup Celery chopped
1 Large Onion chopped
1 Green Bell Pepper chopped
1 Tsp. Chili Powder
3 Tsp. Prepared Mustard
2 Cans Tomato Soup
2/3 Cup Worcestershire Sauce
3 Bay Leaves

Brown ground beef with celery, onion and green pepper. Drain well. Add remaining ingredients and simmer 2-3 hours stirring often. Remove Bay Leaves.

This is a wonderful hearty dinner... My boys love it! Enjoy!

Crock Pot Chicken Pasta...

I got this fabulous recipe from Sharee... it's a crowd pleaser!

1 Can Cream of Chicken Soup
1 8 oz. Cream Cheese
1/2 Cup Water
1 Packet Dry Good Season Italian Dressing

Combine these ingredients in a Crock Pot and cook on high for 4 hours. Mix with a wire wisk.

6 Chicken Breasts
Cut into bite size pieces and cook in butter til done.

1 Bag Bowtie Pasta
Cook pasta while meat is cooking...

Combine all ingredients in a large pasta bowl.

This is a repeat recipe in our home... very hearty...kids love it!

Chicken Stuffing Casserole...

This is one of David's favorites... Super easy and yummy!

6 Chicken Breasts Trimmed and quartered
2 6 oz. Packets Chicken Stove Top Stuffing
2 Cans Cream of Chicken Soup
2/3 Cup Sour Cream
2/3 Cup Half and Half

Mix stuffing with 3 cups of water and set aside. Arrange chicken in the bottom of a casserole dish. Mix soup, sour cream and half and half... pour over the top of chicken. Spread stuffing evenly on top of soup mixture. Cover and bake at 350* for 35 minutes...uncover and bake 10 more minutes.

Enjoy...

Toasted Parmesan French Bread...

So good they'll wipe their plates with it...

Loaf of French Bread
1 Cube softened Butter
Parmesan Cheese

Slice bread into 1 inch slices on the diagonal. Spread a little butter on each slice and sprinkle with Parmesan Cheese. Heat a large non-stick skillet... turn bread butter side down and toast until golden.

I serve this with almost all pasta dishes... and some soups. Yum!

Chicken Fettucini...

Okay this is sooooo easy... but sooooo yummy!

2 Bottles of Fettucini Sauce
4 Chicken Breast
2 Tablespoons Butter
1/2 Cup Half and Half
1 Cup Parmesan Cheese
4 Cups Broccoli Florets (lightly steamed)
Fettucini Noodles (Cooked)

Cut chicken into bite size peices and brown in butter... salt and pepper to taste. Chicken should be cooked throughly. Add Fettucini Sauce, half and half and about 1/2 cup of Parmesan Cheese. I use two different brands of fettucini sauce... like one with mushrooms and one with garlic.

Pour Fettucini Sauce over noodles. Top with Broccoli and sprinkle with Parmesan Cheese.
